Bran Muffins - Bulk Mix
Batter:
- 1 16 oz box bran cereal
- 3 cups sugar
- 5 cups flour
- 5 t soda
- 2 t salt
- 1 quart buttermilk
- 4 eggs
- 1 cup salad oil
- 3 t cinnamon
- 1 t cloves
- 1 t nutmeg .
- 1 cup raisins, dates, nuts, pineapple, apricots, or candied cherries (optional)
Glaze (optional):
- 2 T margarine
- 4 T lemon juice
- 1 cup powdered sugar
In large bowl, mix dry ingredients. Add liquid and blend. The batter will keep (if covered) in refrigerator indefinitely. Bake 12-15 minutes at 400°. If desired, mix ingredients for glaze together and drizzle over muffins.
