Bran Muffins - Bulk Mix

Batter:

  • 1 16 oz box bran cereal
  • 3 cups sugar
  • 5 cups flour
  • 5 t soda
  • 2 t salt
  • 1 quart buttermilk
  • 4 eggs
  • 1 cup salad oil
  • 3 t cinnamon
  • 1 t cloves
  • 1 t nutmeg .
  • 1 cup raisins, dates, nuts, pineapple, apricots, or candied cherries (optional)

Glaze (optional):

  • 2 T margarine
  • 4 T lemon juice
  • 1 cup powdered sugar

In large bowl, mix dry ingredients. Add liquid and blend. The batter will keep (if covered) in refrigerator indefinitely. Bake 12-15 minutes at 400°. If desired, mix ingredients for glaze together and drizzle over muffins.
