Master Mix
(use for Bisquick or other biscuit mix)
- 9 cups sifted all purpose flour
- 1 cup dry milk solids
- 1/3 cup double-acting baking powder
- 1 T salt
- 2 t cream of tartar
- 1/4 cup sugar
- 2 cups shortening which does not require refrigeration
Sift flour before measuring. Stir dry milk solids, baking powder, salt, cream of tartar, and sugar into the flour. Sift together three times into a large mixing bowl or onto a large square of plain paper. . Cut in shortening until Master Mix is the consistency of cornmeal. Store in covered containers at room temperature.
To measure Master Mix, pile it lightly into a cup and level off with a spatula.
