Potato Rolls

  • 1 pkg yeast
  • 1 cup lukewarm water (use the water in which the potatoes have been boiled)
  • 1 cup mashed potatoes
  • 1 cup flour
  • 1/2 cup shortening
  • 1/2 cup sugar
  • 1/2 t salt
  • 2 eggs
  • Additional flour

Dissolve the yeast in water. Add mashed potatoes and 1 cup flour. Let rise 1 1/2 to 2 hours. Cream together shortening, sugar, salt, and eggs. Add to yeast-potato mixture. Add enough flour to make a stiff dough. Let rise 1 1/2 to 2 hours.

Roll out dough on floured board 1/2 inch thick. Cut out and lap over. Let rise until very light. Bake at 375° for 8 to 10 minutes.
