Dirty Rice

  • 2 T bacon grease
  • 2 medium onions, finely chopped
  • 4 green onions, finely chopped
  • 2 or 3 chicken livers, finely chopped
  • 4 cups cooked rice
  • 1 dozen oysters, chopped

In heavy pot or iron skillet, fry onions (not the green ones) in grease until edges begin to brown. Add livers and green onions. Fry slightly for a few minutes longer. Add cooked rice and oysters. Reduce heat and cook slowly about 45 - 60 minutes, stirring frequently. Add. small amount of water to keep moist.
