Hot German Rice Salad

  • 1 cup long grain white rice
  • 8 slices bacon
  • 1/3 cup sugar
  • 1/3 cup vinegar
  • 2 T water
  • 2 T chopped green pepper
  • 2 T chopped pimento
  • 2 T chopped onion
  • 1/2 t celery seed
  • 1/2 t salt
  • 1 hard boiled egg, sliced

Cook rice as directed. Cook bacon until crisp; drain and crumble. (reserve bacon drippings). In sauce pan, combine 1/4 cup bacon drippings and all ingredients except bacon and hard boiled egg. Cook and stir until liquid. is absorbed. Add bacon, reserving some for garnish; toss. Top with reserved bacon and sliced egg. Serve hot.
