Italian Rice Salad

  • 3/4 cup Italian dressing
  • 3/4 cup mayonnaise
  • 1 1/2 cup chopped or shredded fresh vegetables: carrots, celery,
  • green onions, green and red peppers, tomato, or radish – any combination
  • 3 cups cooked rice

In a large bowl, blend dressing with mayonnaise. Stir in vegetables. Add rice and toss well. Pack in ring mold or bowl. Chill. Invert on bed of greens to serve.
