Blitz Kuchen

Pastry:

  • 1/2 cup sugar
  • 1/2 cup butter
  • 4 egg yolks
  • Juice and rind of 1 lemon
  • 6T milk
  • 1 cup flour
  • 1/2 t salt
  • 1 t baking powder

Mix sugar and butter. Add beaten egg yolks. Beat well. Add lemon rind, juice, and milk. Add flour which has been sifted with salt and baking powder. Spread in 2 greased and floured 8 x 8" layer pans.

Glaze:

  • 4 egg whites
  • 1 cup sugar
  • 1 can coconut

Beat egg whites stiff. Add sugar. Mix. Spread on top of pastry layers and sprinkle with coconut. Bake in 350 degree oven for 30 minutes. When cool, turn 1 layer upside down on plate and spread with filling (see below). Then put other layer on top.

Filling:

  • 3/4 cup sugar
  • 1/3 cup flour
  • 1/4 t salt
  • 2 cups milk
  • 3 egg yolks, slightly beaten
  • 1 t vanilla
  • 2 T butter

Mix sugar, flour, and salt thoroughly. Gradually stir milk into mixture and then cook over medium heat until thick. Add egg yolks slowly. Cook an additional two minutes and add vanilla and butter. Cool.
