Chocolate Up-Side Down Cake

  • 1 1/2 cups sugar
  • 2 cups flour
  • 3 t baking powder
  • 1 t salt
  • 3 T cocoa
  • 4 T oleo, melted
  • 1 cup milk
  • 1 t vanilla
  • 1 1/2 cups boiling water

Topping:

  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 3 T cocoa
  • 1/4 t salt

Measure sugar, flour, baking powder, salt, and 3 T cocoa into sifter. Sift into bowl. Add oleo, milk, and vanilla to dry ingredients and pour into ungreased pan. Mix together topping ingredients in small bowl. Sprinkle over batter in pan. Pour 1/1/2 cup boiling water over all. Bake 45 minutes in 350 degree oven.

When done, remove from oven and immediately place tray on top and flip. Scrape chocolate icing left in pan to top of cake. Handle with care in flip-flop procedure – it is very hot!
