Grandma Chessher's Layer Cake

  • 2 cups sugar
  • 2/3 cup Crisco (she used part butter)
  • 3 eggs
  • 3 cups flour (or 2 1/2 cups flour and 2 rounded T cornstarch)
  • 1/2 t salt
  • 2 t baking powder
  • 1 1/4 cups milk
  • Vanilla

Cream sugar and shortening together. Add eggs one at a time and beat well after each. Sift together flour, salt, and baking powder. Add flour and milk alternately to creamed mixture, beginning and ending with flour. Add vanilla. Bake in three 9" round cake pans at 350° approximately 25 minutes or until center springs back when gently touched with finger.

Ice with white frosting using lemon filling, pecans, or banana slices between layers or make a chocolate fudge icing and have a delicious chocolate cake. She always used this cake to make her white Coconut Cake at Christmasl
