Hummingbird Cake
- 3 cups flour
- 2 cups sugar
- 1 t salt
- 1 t baking soda
- 1 t cinnamon
- 1 1/2 cups vegetable oil
- 1 1/2 t vanilla
- 3 eggs
- 1 can (8 1/4 oz) crushed pineapple, undrained
- 2 cups mashed bananas
- 1 cup chopped pecans or walnuts
Sift ,flour, sugar, salt, soda, and cinnamon in large bowl. Add oil, vanilla, eggs, and pineapple. Mix well by hand (do not use electric mixer). Fold in bananas and nuts. Turn into greased and floured 10" tube or bundt pan. Bake at 350° 60 - 70 minutes until cake tests done. Don’t overbake. Cool in pan for 15 minutes, then invert pan onto plate and let cool.
