Pecans-A-Plenty Cake

  • 1 pkg Pillsbury Plus Yellow Cake Mix
  • 1/4 cup firmly packed brown sugar
  • 1 cup water
  • 1/4 cup margarine or butter, softened
  • 1 t vanilla
  • 3 eggs
  • 1 cup finely chopped pecans (or walnuts)

In a large bowl, blend all ingredients except pecans at low speed until moistened. Then beat for two minutes at the highest speed. Stir in pecans and bake 25-35 minutes. Frost with icing below or use a cream cheese frosting.

Frosting:

  • 1/3 cup margarine or butter, softened
  • 4 cups (1 lb) powdered sugar
  • 1/4 t salt
  • 2 to 3 T milk
  • 1 t vanilla
  • 1/2 cup chopped pecans

In a large bowl, cream margarine. Add remaining ingredients and beat until smooth and of spreading consistency. If necessary thin with additional milk. Sprinkle top with pecans.
