Pineapple Nut Bread

  • 3/4 cup packed brown sugar
  • 3 T soft butter
  • 2 eggs
  • 2 cups flour
  • 2 t baking powder
  • 1/2 t salt
  • 1/4 t soda
  • 1 can (8 1/2 oz) crushed pineapple
  • 3/4 cup chopped nuts
  • 2 T granulated sugar
  • 1/2 t cinnamon

Heat oven to 350°. Grease one large or two small loaf pans. Cream brown sugar, butter, and eggs until fluffy. Sift-flour and blend dry ingredients together. Stir half of flour mixture into creamed mixture. Add pineapple and juice, then remaining flour. Blend in nuts. Pour into pan. Mix granulated sugar and cinnamon and sprinkle over top. Bake 60-70 minutes for a large loaf, 30-40 minutes for a small loaf. This is also nice baked in round tin cans.
