White Cake

White Cake

  • 2 cups sugar
  • 3/4 cup shortening
  • 3 eggs
  • 3 cups flour
  • 2 t baking powder
  • Pinch of salt
  • 1 1/4 cup milk
  • 1 t vanilla

Cream sugar and shortening. Add eggs. Mix well. Add dry ingredients alternately with milk. Mix well. Add vanilla. Pour into 2 greased and floured round cake pans. Bake at 400° for 30-40 minutes.

Lemon Icing:

  • 2 eggs, beaten
  • Juice and rind of 2 lemons
  • 1 cup sugar
  • 1 T light Karo
  • 1/8 t salt
  • 1/2 stick butter

Mix together all ingredients except butter in saucepan and bring to a boil. Remove from heat. Add butter. Ice cake.
