Aunt Della's Peanut Brittle
- 3 cups sugar
- 1 cup white karo
- 2/3 cups of water
- 2 cups peanuts
- 2 T butter
- 1 t soda
Boil sugar, karo, and water until it comes to a boil. Continue cooking until it crinkles and crackels. Add peanuts and cook until candy is golden brown or the peanuts leave their shells. Then add butter with soda mixed in it. This boils up real fast so be careful when you add the soda and butter. Pour out in a large pan and cover with aluminum foil.
Aunt Della dropped hers on the floor to break it into pieces. This added a dramatic effect and scared me. Of course, knowing her, I shouldn’t have been surprised.
