Hawaiian Drop Cookies

  • 2 cups flour
  • 2 t baking powder
  • 1/2 t salt
  • 2/3 cup shortening
  • 1 1/4 cup sugar
  • 1/2 t vanilla extract
  • 1/2 t almond extract
  • 1 egg
  • 3/4 cup crushed pineapple, well drained
  • 1 cup coconut

Sift flour, baking powder, and salt together. Cream shortening, sugar, and extracts thoroughly. Beat in egg until mixture is smooth. Blend in pineapple, coconut, and dry ingredients. Drop by teaspoon onto ungreased cookie sheet 3" apart. Bake at 325° for 20 minutes. Makes 60.
