Lemon Sours

  • 1 3/4 cup flour
  • 1/2 cup butter
  • 1 1/4 cup brown sugar, divided
  • 2 eggs
  • 1/8 t baking powder
  • 1/2 t vanilla
  • 4 oz Angel Flake coconut

Mix flour, butter, and 1/4 cup brown sugar as for pie crust. Pat into 9 x 13" pan. Bake at 350° for 8 to 10 minutes.

Mix eggs, 1 cup brown sugar (don’t pack), baking powder, vanilla, and coconut together. Spread over crust. Bake an additional 15-20 minutes.

Frosting:

  • 2/3 cup powered sugar
  • Juice and grated rind of 1/2 lemon

Mix ingredients together. Drizzle over filling as it comes out of the oven. Cool and cut in squares.
