Sugar Cookies
- 3/4 cup soft shortening (part butter) 1 cup sugar
- 2 eggs
- 1/2 t flavoring (lemon or vanilla)
- 1 t salt
- 2 1/2 cups sifted flour
- 1 t baking powder
Mix thoroughly shortening, sugar, eggs, flavoring. Stir in flour, baking powder, and salt. Chill at least 1 hour. Roll out 1/8" thick. Cut into Christmas shapes. Place on ungreased cookie sheet. Bake 6-8 minutes at 400°. When cool, ice.
Icing:
- 1 cup sifted powdered sugar
- 1/2 t vanilla, lemon, almond, or peppermint flavoring
- Milk or water
- Food coloring
Mix together using enough liquid to make icing easy to spread. Add food coloring. Spread on cookies.
