Gelatin Salad

  • 1 large can crushed pineapple
  • 2 bananas
  • 80 small marshmallows (or one large handful)
  • 2 cups grated cheddar cheese, divided
  • 2 pkgs Jello – 1 orange, 1 lemon
  • 1 1/2 lemon
  • 2 T flour
  • 1 cup sugar

Drain pineapple, saving juice. Cut bananas in quarters lengthwise; then with a sharp knife, cut seeds out. (This makes it keep a lot longer as the seeds are what makes it darken.) Slice bananas fairly small. Make Jello with 3 cups of water and add pineapple, 1 cup grated cheese, marshmallows, bananas, and 1/2 lemon juice. Put in refrigerator to jell.

Cook reserved pineapple juice (about a cup), juice and rind from one lemon, flour, and sugar until it is like mush. Let cool. Put Cool Whip in mush and pour over the already jelled jello. Then add remaining cup of cheese over all (the more cheddar, the better).
