Lemon-Banana Icing

Lemon-Banana Icing

  • 1 cup sugar
  • 1/4 t salt
  • 1 cup mashed bananas
  • 2 1/2 T flour
  • Grated rind of 1 lemon
  • 2 eggs
  • 1 T oleo

Cook ingredients in double boiler for 5 minutes until thick. Remove from fire and cool. This is good on banana layer cake.
