Seven Minute Icing

Seven Minute Icing

  • 2 unbeaten egg whites
  • 1 1/2 cups sugar
  • 5 T cold water
  • 1/4 t cream of tartar
  • 1 1/2 t light corn syrup
  • 1 t vanilla

Combine all ingredients except vanilla in the top of a double boiler. Cook over rapidly boiling water for 7 minutes, beating constantly (highest speed) with an electric mixer. Remove from heat and add vanilla. Continue beating until icing’is of desired consistency. Makes more than enough icing for a two layer cake.
