Deluxe Lemon Meringue Pie
- 1 baked pie shell
- 1 1/2 cups sugar
- 6 T cornstarch
- 1/4 t salt
- 2 cups milk
- 3 eggs yolks, beaten
- 1/2 cup lemon juice
- 1 t grated lemon peel
- 2 T butter
Bring milk almost to a boil. Gradually stir milk into sugar, cornstarch, and salt. Cook about 5 minutes until thickened. Add egg yolks and cook a minute more. Add lemon juice and rind and butter. Cool and pour into baked pastry. Top with meringue and bake at 425° for about 5 minutes or until brown.
Meringue:
- 3 egg whites, beaten
- 6 T of sugar
- 1 t lemon juice
