Broccoli Chicken Casserole

  • 3 10 oz pkgs frozen broccoli
  • 4 whole chicken breasts
  • Salt
  • Onion
  • Celery
  • Bay leaf
  • 2 cans cream of chicken soup
  • 1 cup mayonnaise
  • 1 T lemon juice
  • 1 t curry powder
  • 1/2 cup sharp cheddar cheese, grated

Cook broccoli in water with a little salt until tender. Cook chicken breasts in water with salt, onion, celery, and bay leaf until tender. Cut into pieces.

Mix mayonnaise, lemon juice, and curry powder together. In large buttered pyrex baking dish (11 1/2"), arrange layers of broccoli, chicken, and soup mixture. Then add a second layer of broccoli, chicken, and soup mixture.

Top with buttered bread crumbs and cheese. Bake at 350 degrees for 30 to 40 minutes. Cracker crumbs, slivered almonds, and water chestnuts may be added.
