Eggplant Lasagne

Eggplant Lasagne

  • Spaghetti sauce (see recipe on page 143)
  • Eggplant
  • Mozzarella cheese
  • Cottage cheese
  • Parmesan cheese

Layer ingredients in order and repeat. Bake at 350° for 30 minutes. Zuchini can be used instead of eggplant.
